Oatmeal Golden Raisin Muffins from Alexandersmom.com

I love making muffins. In the world of pastry and baking I think muffins are one of the easiest things to prepare. Usually you just mix the wet ingredients together. You mix the dry ingredients together. Then you combine the wet and the dry. It’s my Saturday morning routine at home with Alexander helping.

You can add so many wonderful healthy ingredients into the mix as well. Oats and Golden Raisins are a great source of antioxidants. They are both high in fiber and high in iron.

This recipe was also a chance for me to experiment with soaking the oats in buttermilk. When I decided to create an oatmeal muffin recipe, I remembered a recipe I had seen literally 20 years ago that soaked the oats in buttermilk. I find that the oats in oatmeal muffins and sometimes cookies are still hard in the finished product making it less appealing. Soaking the oats in the buttermilk softened them considerably. The finished muffin is utterly delicious, soft and moist.

Oatmeal Golden Raisin Muffins

Yield – 12 Muffins

1 Cup Old Fashioned Oats (3.5 oz)

1 Cup Buttermilk

1 Egg, Large

1/2 Cup Tightly Packed Light Brown Sugar (4 oz)

1 Cup All Purpose Flour (5 oz)

1 teaspoon Baking Powder

½ teaspoon Baking Soda

½ teaspoon Salt

½ teaspoon Ground Cinnamon

⅓ Cup Canola Oil

1/2 Cup Golden Raisins

1. Soak Oats in Buttermilk for ½ hour,

whisk together egg and oil, whisk in brown sugar,

switch to a spatula

and stir in oats.

2. Stir together the dry ingredients,

add the dry ingredients to the oat mixture,

scoop muffin batter into paper lined muffin tin and bake at 375 degrees for 14 – 16 minutes until golden brown.
