Whenever I drink mulled cider I am instantly transported back to my childhood. I was a member of the Children’s Chorus growing up and every holiday season for years we went caroling. The houses were all lit up in their Christmas finery. I was dressed in a velvet or taffeta holiday dress wearing black stockings and black velvet ballet slipper shoes. We walked from house to house in upstate NY on a December Sunday in the dark early evening, my toes freezing.
There was always someone along our route expecting us with hot mulled cider, the scents filling their home. Believe me there is nothing better than some hot mulled cider to warm up ones practically frost bitten feet next to a beautifully decorated Christmas tree, a roaring fireplace and twenty kids singing “We Wish You A Merry Christmas” at the top of their lungs.
I created this recipe with these memories in mind. I added some orange peel and Cardamon for a more interesting and unusual aroma. “Now bring us some figgy pudding and a cup of good cheer!”

Orange Cardamon Good Cheer Mulled Cider
Yield – 2 to 3 Mugs
4 Cups Apple Cider
2″ Strip of Orange Peel (Navel, Cara Cara, Clementine or Mandarin are best)
1 Stick of Cinnamon
10 Whole Cloves
5 Allspice Berries
2 Green Cardamon Pods
1/8 teaspoon Corriander Seeds
1. Put spices in a drawstring bouquet garni bag,
large ball tea infuser
or make your own bag from cheesecloth, add to cider,
bring to a rapid boil in a covered sauce pan, lower heat to a simmer, simmer for minimum 1 hour up to 2 hours, halfway thru press on the spices with a wooden spoon to help release the flavors,
pour and enjoy the warmth!
The drawstring bags are reusable, make sure you rinse them out and let dry overnight.
