I’ve been throwing together this recipe . . .
Well that’s what I started writing on September 8 and only have gotten a free moment to finish writing this a month and a half later! I’ve been so busy being a first year teacher in the NYC DOE that I did not even make Alexander’s birthday cupcakes for school. For Shame, oh the ignominy. I had to buy the cupcakes at the grocery store.
Needless to say why this recipe is so important. It takes so little time to make it. My best suggestion for weekly meal planning is to cook a whole box of pasta on Sunday and divide it some in Refrigerator, some in freezer. Then when you want just add sauce or the following ingredients for a quick main or side dish.

The Easiest Tuna Pasta Salad Ever
Yield – 4 Servings
1/2 Pound Elbow or Pasta of your choice
5 oz Can of Solid White Albacore Tuna in Water
2 Tablespoons Mayonnaise
1/3 Cup Sweet Relish, drain excess liquid
1 teaspoon Dried Dill or 2 teaspoons Fresh Dill
1/4 teaspoon Kosher Salt
1. Cook pasta in salted boiling water until al dente. Drain and rinse under cold water. Set aside.
2. In a large mixing bowl
stir together the other ingredients,
toss with pasta,
chill for 1 hour and serve. This lasts up to two days in refrigerator.
Optional : add 2 stalks chopped celery.
